This dish has a thin rim that spreads almost in parallel. Its thinness conveys the skill of Tetsuaki Nakao. A chef who uses Gingayu dishes said, "Nakao's dishes have a sense of tension. They make me feel like I have to face them seriously." This work makes it clear that this is what he said. It is called mukozuke because it is a dish that is placed on the other side of the meal rather than in front of it in kaiseki cuisine, and it is therefore tall.
